Spicy Baby Potato Recipe

This recipe today is mind numbingly simple and so quick… #justsaying !! Imagine crispy baby potatoes full of spice and a kick of tanginess on the palette.This Spicy Baby Potato Recipe is seriously delicious. So much so , that I ate half of them while clicking the pics  😛

Ingredients :
  1. 1 kg baby potatoes
  2. Mustard oil for cooking
  3. 1 teaspoon red chili powder
  4. 1 teaspoon minced garlic (optional)
  5. 2 teaspoons  dried coriander seeds (roughly ground are the best )
  6. 1/4 tsp turmeric powder
  7. 1 tablespoon  dried pomogranate seeds (anardana) or amchur  / dry mango powder
  8. Salt to taste
Method :

Wash the baby potatoes and soak them in water for 4-5 hours. This removes the deep seated dirt from the skin and also kind of softens the potatoes a bit.

Do not peel the skin, cut the baby potatoes into quarters like this.

The more sharp edges, the crispier the potatoes 😉 Now in a heavy bottomed skillet, add 3 tablespoons of mustard oil. Keep the flame on high and let the oil start smoking. A common mistake what many people do is, they don’t let the oil smoke. That gives a pungent raw taste to the dish. Always heat mustard oil till smoking point before cooking with it 🙂 . Add the garlic to sizzling hot oil , let it flash fry for 30 seconds.At this point, tumble in the chopped potatoes.

Coat the potatoes well in oil and add all the spices except the  amchur /anardana. This will allow the potatoes to crisp up nicely.

Mix well and cook on medium flame.

Once they are halfway done, add the amchur /anardana. Mix in well and cook on medium high till potatoes have cooked through.

That’ it ! Done 🙂 Serve as is as a snack or with chapatis and grated cucumber raita!! Bissful<3
