Who was Anne Frank ?

Who was Anne Frank? At the age of 13, Anne Frank -a Jewish girl; went into hiding from the Nazi Forces. She was staying in Holland at that time, and during World War II; when German Forces occupied Holland. Jews were in danger of being exterminated. She had an elder sister too. So when the sister got orders to report to a German Work camp-the entire family went into hiding with their friends. The place they hid was, as a small secret apartment or the ” Rear Annexe” behind her Father’s warehouse. During this time, some of their non-Jewish friends, like her father’s secretary, risked their lives to smuggle them food! It is during this period that she started writing her journal/diary. Here, she writes to her imaginary friend”Kitty”.

She has shared her feelings, the fear, the thoughts, the philosophy…and even the teenage fights with her mother and arguments with her sister, crushes on boys etc. There is always hope and optimism in her writing. She wanted to become a journalist or an author one day. She even edited her diary, in course of time, so that it could be published. What is more hopeful as that! Her cherished dream did come true. Anne died of Typhus fever in the German concentration camp of-Bergen Belsen. She was only 15 . Her father, who was the lone survivor; made sure his daughter’s writings were published.

Why is Anne Frank Famous ?

Heard of a book called – Diary of a Young Girl? Yes…Anne Frank’s diary, that’s what it is! Since it was published in 1947,2 years after her death; this book has been published in over 60 languages and has sold tens of millions of copies. This book has been turned over into Oscar-winning movies, and numerous plays. A young girls’ diary has gone on to become the most read holocaust literature. So much so, it is a course book in several schools.

So what is it that makes Anne so special?

It is her undeniable innocence, living the life she had…and her unending optimism. Despite being a victim to people’s cruelty and persecution…she hopes and hopes still.

The times were different, those days were different ..events were not at all in their control. Still she – and many like her persevered. Yes, she died. She was a young girl who was a prisoner. Many of us, under much lesser circumstances just give up. 

Just as I am writing this article today, there may be many such Anne Franks, in difficult circumstances. Many people might be prisoners to their minds, thoughts, situations.

What is it, that a person should do at these times? Become cynical or fatalistic? Ignore the situation and accept “fate”? Lament over the past mistakes, the chances lost? Or take a call, decide your own fate.. and achieve your goal. Naturally, start first, with fixing yourself   :)

Honey Roasted Peanut Butter Recipe: Peanut butter is one of the most underrated breakfast items. Did you know, peanut butter is extremely high in proteins, is filling and has good nut fats? Apply peanut butter on toast is a more balanced meal of carbs and proteins + minerals. Jam toast or butter toast on the other hand-pure carbs +fat!

 Now store-bought peanut butter is very expensive and has loads of added preservatives! What if, you could make totally natural and yummy peanut butter at home- only at 1/10th the price? ;)

Ingredients Needed for Honey Roasted Peanut Butter :
  1. 300 gms shelled peanuts
  2. 3 tablespoons organic honey
  3. 1/4 teaspoon sea  salt

Procedure for making  Honey Roasted Peanut Butter :

On a baking sheet/ tray, spread the peanuts in a single layer. Roast at 250 F for 30-40 minutes. We are looking for a slow roasted flavor. Every ten minutes or so, give the tray a shake so that the peanuts are roasted evenly. Once done, they will look like this.

Remove the husk from the peanuts.  I use the husks as organic manure in my garden :P  What I do at this point is, to microwave the peanuts at 80% for a minute. This makes them warm and loosens the oils a bit. Warm peanuts when blended make the creamiest of peanut butter.

Next, add the peanuts in a blender. Pulse them on high for one minute. At this point, they will get coarsely ground. If you like chunky peanut butter, take out a tablespoon or so of crushed peanuts to mix in later. At this point, add the honey and the salt.

Blend ,pulse ,pulse…be patient.Keep scraping the bottom and sides of the blender

Give a break to the mixer every 1 minute. After 5 minutes, most recipes ask you to stop. At this point, I do something that makes this super creamy and easy to spread. I divide the peanutty dough into two parts and blend in the small grinder in parts. Some magic happens then. Those last two minutes give me such smooth peanut butter..yum yum yum !!

Easy Home Made Peanut Butter Stuffed Chocolate Cookies: I am a very chocolate person. Whenever I go for ice cream or any dessert for that matter, it has to be either coffee or chocolate.I am yet to grasp the concept of tutti fruity, strawberry or any other fruit flavor. It’s always like this no? That’s the way we are wired. I think, there is always a person like me, in every group-chocolate only please :P

Before I go there, a quick question for you. What kind of a cookie person are you? Do you like hard crunchy cookies or ooey-gooey decadent cookies? If you love rich, decadent, gooey…sinfully yummy cookies-This is exactly what you want!

These cookies are super easy to make and will earn you innumerable fans for your baking skills ;)

Ingredients Required for Peanut Butter Stuffed Chocolate Cookies:

  1. All Purpose Flour 1 1/4 cup
  2. Regular Sugar 3/4 Cup ( Just pulse it through the grinder to make powdered sugar )
  3. Regular Cooking oil (unflavored ) 1/2 Cup (You may use butter if you wish, I use oil and it works fine and dandy )
  4. Good Quality Cocoa Powder 1/2 cup
  5. In all these measurements,I am using a medium sized mug/cup. Use the same cup to measure everything and you will never make a mistake in proportions.
  6. 1/4 teaspoon salt
  7. 1/2 teaspoon baking powder
  8. A splash of good quality Vanilla Extract
  9. 1 medium-sized egg
  10. Ready Peanut butter dough see HERE .
TIP- For Eggless version, replace the sugar and eggs with condensed milk.

Method of Making Peanut Butter Stuffed Chocolate Cookies :

In a large bowl, sieve together the all-purpose flour or maida, coco powder, baking powder, and salt. Basically all the dry ingredients. Mix them well.

Now for the wet ingredients. I prefer to keep things simple and have a minimum fuss. Simply put the oil, egg, powdered sugar and a splash of good quality Vanilla extract,in the blender.

Pulse on high for 30 seconds and you are done. Its that simple!

Next make a well or a depression in the center of  the flour cocoa mixture.Slowly add the blended wet ingredients.Mix well with a spoon.Keep incorporating the sugar and oil mixture little by little. Till a soft dough is formed. At this point I knead it…just a very little bit with ,my hands.

This is the texture and consistency we are looking for. It should break off when pulled apart and should not be sticky or elastic.

Cover this dough with cling film and refrigerate  for 2 hours. Refrigerating the cookie dough makes for more crumbly and rich cookies. Plus ,any sort of designs or fillings are best applied on chilled dough. That allows the m to stay.

Remember the peanut butter dough that was made? It is nothing but home made peanut butter that is halfway there. You can see the recipe for Home Made Honey Roasted Peanut Butter . If you want simply sinful chocolate cookies,without the stuffing,skip this step by all means :)

Once the dough is chilled, now is the time to assemble the cookies!

Just make a small round ball of the chocolate cookie dough. Flatten it between the palm of your hands. Take the peanut dough 1/5 the amount of chocolate dough and flatten it similarly.

Make a depression in the chocolate cookie dough.Place the peanut butter filling in the center,and sandwich the whole thing between another layer of flattened chocolate cookie dough. Seal the ends by pressing them together.

Repeat the process for the rest of the cookies! Here I am making a batch of  7  gorgeous cookies. The rest of the cookies will be ready to make. I put them in an air zapped zip lock bag and freeze them,till the mood strikes next! This way,they will be freshly baked when ever I want-with minimum fuss.

Bake these cookies on 250F oven /convection mode for 15 minutes. They should be still soft but firm when done. If they feel a bit soft to touch,don’t worry. They will harden up once they are cooled.

Let the cookies cool for around 10 minutes. By this time they will have hardened around the edges, will be crumbly and gooey inside.MUCH better than the store bought cookies in texture and in taste. I promise :)

Mushroom Sandwich Recipe Indian: Sandwiches are the perfect light meal. You can load them up with veggies and meats of your choice. Add that guilty pleasure of cheese…and they still are healthy. I mean mostly :P

Of Late, I have developed this whoa liking for mushrooms. It is quite weird actually. I think it has to do with Navs . She has this crazy life long love with Mushrooms and being her  friend and flatmate…I think she has passed it on to me. :P Today, I have jotted down a recipe of my favorite fully loaded mushroom – olive -tomato extravaganza. I add a bit of tomato and olives to jazz it up a bit. I f you area vegetarian, you will love this. If you are a non vegetarian…you will still love it :P No choice  really,its that simple and yummy! ;)

Ingredients you need  for Mushroom Sandwich :
  1. 3 Slices of Bread of choice . I am using a regular sandwich bread here.
  2. Half a cup of freshly grated cheese. Again your choice. I am going with sharp cheddar cheese
  3. A pinch of salt to taste
  4. Chili flakes- adjust hotness as per taste
  5. A quarter tea spoon dried oregano

  1. Ketchup or Pizza Sauce- A tablespoon per sandwich
  2. Fresh Button Mushrooms
  3. 2 tablespoons pitted and cut olives “(green or black as per your choice)
  4. A small sized tomato thinly sliced

Method of Making Mushroom Sandwich :

I take three slices of bread. Simply because its more filling and it allows me to load more veggies. What I do is , lightly toast the slices first. This way, they will not turn soggy with the filling.

Next, I apply a bit of cheese on two slices of bread. The cheese acts as a base and binding agent-besides its obvious yum factor :P This prevents the sandwich from turning soggy. Preheat the oven / microwave at convection mode at 250 F.

I load on the mushrooms and olives one one slice of bread.I then apply a bit of tomato basil sauce(feel free to use ketchup ) just add a dash of seasoning of salt, chili flakes and oregano. Top it up with shredded cheese of choice. Cheat a bit on the next slice. Add all the veggies, besides mushroom  that you want, the same seasoning. Just make the cheese content half. Now proceed to pile them on like a double decker!

Next, I bake these sandwiches for 15 minutes at 250 F. This cooks the veggies inside evenly, and crisps up the bread. The cheese has melted into oeey gooey deliciousness…heaven on a plate. Just, just have it all right!!

Banana smoothie: Mornings are hectic! In our busy schedules, we hardly have time for breakfast. I love the concept of a quick fix and filling breakfasts. They keep me fueled throughout the morning and charged up, to focus on my tasks at hand. I know for a fact that not only the working women like us, but many ladies who stay at home and work, eat breakfast several hours AFTER they wake up. What to do! Ingredients required for Banana Smoothie :

  1. Skim Milk/Soy Milk/Almond Milk 1/2 Cup
  2. Fresh Yogurt 1/4 cup (optional if you don’t like the taste)
  3. Rolled Oats 1/4 cup
  4. Ice cubes (optional)

Dump all the ingredients in a blender, but only half of the milk …And blend away :)

Baby Corn Mutter Masala Recipe: What Indian Dish you can cook with baby corn? Plenty actually :) This simple recipe that i am sharing with you today is a family favorite. You vegetarians out there will definitely enjoy cooking and eating this! The gravy is flavorsome, simple and does not take away from the real taste of our star ingredients.

Presenting to you: Indian Style Corn Mutter Masala  :) It is awesome when served with either rice or Roti/ Naan or any Indian Flatbread . We will use minimal spices, for the real flavor of each and every ingredient to shine :)

Ingredients Required for Baby Corn Mutter Masala:
  1. Fresh Baby corn,cut into inch-long quarters.200gm
  2. Fresh Shelled peas 200 gm. You can go for frozen peas too!
  3. Three medium sized spanish/red onions finely chopped
  4. 2-3 garlic cloves finely chopped
  5. An inch of ginger peeled and chopped
  6. 4 medium-sized red tomatoes, finely chopped
  7. 1 bay leaf / Tej patta (optional )
  8. 4-5 black peppercorns
  9. 1/4 teaspoon turmeric powder
  10. 1 teaspoon Kashmiri Red Chili Powder (if using any other variety,use only half a teaspoon) This will give both the spice and color
  11. 1 teaspoon coriander powder
  12. Salt to taste
Method of  Preparing  Baby Corn Mutter Masala

In a heavy-bottomed skillet or a pressure cooker. Add two tablespoons of olive oil. You may add any other cooking oil of choice except for pungent oils like mustard oil etc. Once the oil gets hot add hot peppercorns and bay leaf. In a blender add together the onion, garlic, and ginger. Grind to a fine paste.

Add this to  the hot oil and cook on low flame. It will take around 7-8 minutes and the onions will start betting browned up. At this point add all the spices except salt .Cook for 1-2 minutes. You may have to look over the pot,as the spices make the onion stick to the bottom. Resist the urge to add more oil :P

Meanwhile,puree the tomatoes and add them to the cooked onion and spice mixture. Turn the flame to high and let the whole thing come to a boil.

At this point, add the peas and baby corn to the gravy. Put the lid on the pressure cooker and let around 2-3 whistles come. Alternatively, if you are not using a pressure cooker, cover the lid and let the gravy cook on medium-low for 20 minutes. Add around half a cup of water in this case.

After the whistles come, or after 20 minutes; turn the flame on. Let the gravy sit covered for 10 minutes. Now it is ready to serve. Garnish with coriander leaves or chili cut lengthwise. Serve hot with steamed rice or flatbread. Its easy,yummy and something are different :)

2 Minute Microwave Chocolate Mug Cake Recipe: Ok, so its the latest fashion or what? The two-minute cake thingy! But if you think actually, it is quite practical. If you are having a sudden craving for a dessert, what’s better than whipping up your very own dessert in two minutes?

I am listing down my personal recipe here. It is completely eggless and vegan! Add whatever flavoring you wish to add…I am a die hard chocolate fan-so chocolate it is for me ;) Check out the recipe down below :

Ingredients For 2 Minute Microwave Chocolate Mug Cake:

1/4 cup all-purpose flour (maida)
1 tablespoon good quality cocoa powder
1 1/2 tablespoon unflavored vegetable oil (use any cooking oil except for pungent oils like mustard oil etc)

2 Tablespoons of sugar (add more if you like ) Regular granulated sugar will do
1/2 Mug Fresh Milk. Use Soy milk or almond milk for the vegan variant.
1/4 teaspoon Baking powder

A small block of your favorite milk chocolate or liqueur chocolate..:P

The procedure of making 2 Minute Microwave Chocolate Mug Cake:

In a Mug put together the oil and half of milk. Mix well. To this add the sugar and cocoa. Mix all of them together. In a separate bowl sieve the baking powder and flour. Now spoon by spoon start incorporating the flour into the cocoa-milk mixture. Add more milk to adjust the consistency, to thick ribbon-like.

Microwave for 20 seconds at 100% power. Then place the chocolate in the center, such that it sinks in 1/5.A gain microwave for 1 minute or 1.5 minutes on high. By this time the cake will have risen. If you want a gooey choco lava cake kind of thing, just microwave for 45 seconds and eat hot ;)

Wow You Guests with This Amazing Recipe !

We had guests over for lunch yesterday. While everything on the menu was nice and proper finalized, we were racking our brains over the dessert. I sit not always the case? The dessert is usually some Indian dish or the good old fruit cream or ice cream. I was like meh. Its anyways lunch…so dessert is practically going to be served during tea time. We were looking at something nice and classy and definitely easy!! Indian lunches are an elaborate affair :P

My mom said to make your mug cake or something…and that’s when this Idea came to my mind. Just check out the pictures!! The stuff is super pretty looking, delicious and so easy…its actually quite funny ;) Presenting the Half n Half 5 minute Dessert!

Ingredients Required for Half n Half 5 Minute Dessert :

  1. 1 egg (optional)
  2. 1 Tablespoon good quality vanilla extract
  3. 1/2 teaspoon Baking Powder
  4. Handful Chopped Walnuts
  5. Good Swiss  Filled Chocolate / Snickers/ Any other chocolate you like
  6. Medium sized Crystal Glasses – we will measure the following quantities of ingredients per glass. Simply multiply the ingredient quantity with a number of serving glasses.
  7. 2 Tablespoon All-Purpose Flour (Maida)
  8. 1 Tablespoon good quality Cocoa Powder (Dutch Coco is the Best)
  9. 2 Tablespoon Granulated Sugar
  10. 2 Tablespoons Milk

Method of Preparing Half n Half 5 Minute Dessert :

In a large bowl,  sieve 2 tablespoons of flour per serving glass. Add the Baking powder and mix well. Now divide the flour and baking powder mixture to two equal parts. In one part, add 1 tablespoon of cocoa per serving glass. Mix well and set aside.

Now since I cheat, I use a blender and encourage you to do the same ;) Take the sugar, egg, vanilla,walnuts,milk  and the oil in a blender. Pulse well for 1 minute. You will get the wet batter ready.

Pour half of this wet batter to plain flour and the other half into the cocoa powder flour. Mix well to avoid lumping. Do not over mix or beat the batter. It will make the cakes dense.

Now on, its a simple case of assembling your dessert. In the glasses, put 2 spoons of chocolate cake batter, followed by two tablespoons of Vanilla Batter. In the center, plop in your favorite chocolate. Repeat for all glasses.

Microwave the glasses for 4 minutes or till the cake has nicely risen and the top is set.

Gatte Ki Sabzi Recipe: I don’t think, there is anything more diverse and colorful than the world of food! Every city, every little corner of the world has something unique to offer. Rajasthan for centuries together was, and even now is a seat to royal culture. Added to that, the brave and hardy people of Rajasthan have left their own signature mark on the history of this country. Naturally, their food is a direct reflection of their colorful and robust culture!

The food of Rajasthan has a distinctly different ingredient base and naturally very different flavor. Being a desert, hardy crops are grown in Rajasthan, bajra, chickpea etc. Added to this, the vagabond lifestyle of the Rajasthani folk, made it necessary to make food that would use the locally sourced ingredients and would still stay good for days together. This is the reason many Rajasthani dishes use a variety of pulses, flours, and robust spices!

One of the may favorite Rajasthani dishes is their Gatte ki Sabzi. It is basically steamed chickpea dumplings cooked in a yogurt based gravy. It is usually cooked in two ways. The first one is the simple yogurt gravy and the other one involves the use of tomatoes and onion to give a tang to the curry.

Ingredients for Making Gatte :

  1. 1 cup Chickpea Flour or Maida (Coarse Ground Variety preferred)
  2. A small teaspoon ginger garlic paste (optional)
  3. Salt to Taste
  4. 1/2 Teaspoon Ajwain / Carrom Seeds
  5. 1 teaspoon Kasuri Methi (Optional )
  6. 1/3 Teaspoon Turmeric Powder
  7. 1/2 Teaspoon Red Chili Powder

For Making the Gatte :

In a bowl take all the above-mentioned ingredients. Add 2 tablespoons of oil and mix well. Next, add cold water and make a dough out of the chickpea flour.

Let the dough rest for 10 minutes in the fridge. After 10 minutes take it out and roll it not 1/2 inch thick sausage rolls. Meanwhile, put water to boil in a heavy bottomed pan.

Once the water has come to a boil and is bubbling, add these chickpea dumplings carefully to it. Allow the dumpling to get boiled for a good 7-8 minutes. You can judge they are done by inserting a fork in one of them. It should come out clean. Generally the dumplings should not break at all while boiling. Once done, remove the gate to a plate. Don’t throw this water away. This will be the base of the gravy later. Cut the gate into small rolls and fry in regular oil. This will ensure they are nice an crisp and cooked all the way through. Remove them on a paper towel.

For Making the Gatte Gravy :

In the remaining oil of the skillet, add 2-3 full dried red chilies and a teaspoon of Mustard seeds. Allow them to pop. I then simply add the water in which the dumplings were boiled.

Next, in a bowl, I mix 1 cup of curd/ yogurt which is beaten. To this, I add all the spices- half teaspoon turmeric, half teaspoon red chili powder, salt to taste and a teaspoon of chickpea flour or besan. This will give me a thick gravy and prevent the curd from getting split. I lower the heat to a simmer and after 2 minutes add the yogurt base. Continue to stir until the first boil comes. Once the first boil is done, feel free to let it boil away to glory :P

After the first boil, I add the gate or chickpea dumplings. Allow the gravy to boil till it leaves oil and begins to thicken. Since this gravy continues to thicken while cooling, I suggest you turn the heat off while it is still runny and not the perfect consistency. You achieve the desired consistency in 5-6 minutes, without heat.

For Tempering :

In your tempering /tadke wall pan, add a teaspoon of desi ghee/clarified butter, a teaspoon of jeera /cumin seeds,1 pinch asafoetida or Hing and half a teaspoon of red chili powder. Heat to melt the oil and jeera or cumins needs to crackle. Pour this over the ready gatte ki sabzi. This tempering will take the gravy over the edge :)

Strawberry Crumble Recipe: How was your Holi weekend peeps? I have totally had one sweet too many! Holidays are supposed to be indulgence times,so its okay I guess :P

This dish too, which I am sharing with you today is a massive bonanza of a dessert :) Think simple strawberries and cream…now amp it up with almonds, flaky crunchy crust, and jazz up the strawberries in a hot mess !! This strawberry crumbles recipe gives a crunchy, rich and decadent mouthful. Eat this warm with chilled ice cream or heavy cream. You will experience heaven on earth! Err…seems like I have played it up too much? Try it out and see for yourself :p

Ingredients Required for Making Strawberry Crumble :

  1. Fresh Strawberries 2 Cups Hulled and Sliced
  2. 1/2 Cup Sugar ( This is the perfect amount of sugar, any more and it will be too sweet and heavy )
  3. 1/2 Cup All-Purpose Flour
  4. 1 Teaspoon Vanilla Essence
  5. 1/2 Teaspoon Baking Powder
  6. 4-5 Tablespoon chilled cold butter
  7. 3/4 Cup Almonds

Method of Making Strawberry Crumble :

Take Half a cup of almonds and grind them into a fine powder. Also, powder 1/4 cup of regular sugar. Mix the two well. In any pie dish, layer on all the strawberries in an even layer in the bottom. Sprinkle the almond and sugar powder over this.

Now, in a separate bowl, sieve together the all-purpose flour and baking powder. To this add chilled butter. The butter needs to be really cold. Work with your hands and mix the butter in. It should look like coarse oatmeal. This what will give our crumble texture.

Now its the question of simple assembly. We have already layered on the strawberries and almond powder. Mix the remaining 1/4 cup, unpowdered sugar with this buttery flour. Tumble this and roughly chopped almonds over the almond flour layer. Try to make the covering as even as possible. Press lightly with your hands.

Now Bake it on 200 degree Celsius for 30-40 minutes. By this time the top two would have become set crunchy and brown. In the last 1 minute microwave on high for 1 minute. The strawberry will ooze out from some portions. Trust me, that’s a part of its appeal :)

Your crumble is ready !! Let it sit for 10-12 minutes. Serve along with chilled heavy cream or ice cream. Warm strawberry crumble- chilled cream—now you tell me– is it not heaven in a bowl? ;)  Enjoy!!
